This lot of coffee comes to us from the Worka cooperative in Yirgacheffe. It’s a mix of heirloom beans brought together from various member small-holders in the region - processed collectively at a central washing station. Ethiopian coffees used to be mostly demarcated by loose regional affiliations like “Yirgacheffe” or “Sidamo” because of how the Ethiopian Coffee Exchange grouped and auctioned coffees as regional blends. Now that sourcing has become more granular, it’s great to see the diversity and specificity of flavors coming from different coops and producers within each region - not all coffee from Yirgacheffe tastes the same!

This lot from Worka exhibits strong stonefruit and citrus notes throughout - we’re picking up on a juicy peach flavor, some orange blossom florals, and a touch of grapefruit-like tartness giving the cup an edge. There’s also a smooth, brown sugar sweetness at the base of this brew that grounds the lighter notes and makes for a pleasant, mellow finish. An easy-drinking Ethiopian coffee with just the right amount of brightness - what’s not to love?

Knocked me out - sensational stuff

The word that came to mind immediately - after wow - was sensational. The balance of flavors and textures in this cup is perfect. It’s simultaneously light and creamy, citrusy and floral, sweet and smooth. There are layers within layers. Just a beautiful cup. Maybe the most impressive coffee I’ve ever had. Wow. Wow.

This is a workmanlike cup of coffee, light and mellow, tasty enough, but nothing exceptional when compared to other Moustache offerings. However, the nice thing about Moustache is, if you don't swoon over a particular offering, just wait a couple weeks for the next one!

Worka is Working

Worka-ing my way to the bottom of the cup....fast. On the lighter side of taste and texture meaning I can sometimes pickup on the tasting notes but not all the time. Great bag of beans.

Sweet and tart. Lots of flavor.

Very boldly citrusy / acidic. Not “light notes” but very forward. I feel like I’ve been used to over roasted Ethiopian coffee — this however is very different

Loved the Sweetness to it

I got this coffee weeks ago and I still think about it. Sometimes those sweet, fruity flavors can be pretty acidic or overwhelming, but this was a very balanced cup, and was the perfect pour over. No sugar or cream needed.

Not to my tastes, but great quality

I did not like this coffee, but that is because of personal preference. The bright, very light flavors expose the citrus notes and floral aromas creating a mild drinkable brew that reminded me nothing of coffee, more of a very bold tea. I brewed a coarse ground, 38g beans and 16oz water- 4:30 in a french press at 190 degrees.
