Step Two
Grind Your Coffee
Always grind just before brewing for the freshest flavor. For the Clever Dripper, aim for a grind that's a bit coarser than medium—slightly coarser than what you'd use for a standard pour-over, but finer than a French press grind.

Step Three
Boil & Prep
Heat your water to 195–205°F. If you don't have a temperature-controlled kettle, just bring it to a boil and let it sit for 30 seconds—that'll put you right in the zone.
While the water heats, place a paper filter in your Clever Dripper and rinse it thoroughly with hot water. This removes any papery taste and preheats the brewer. Don't forget to drain the rinse water completely before adding your coffee.

Step Four
Pour Your Water
Add your ground coffee to the Clever Dripper, then pour all 336 grams of water in. No special pour technique needed. No bloom step required. The goal here is full immersion—you want all the coffee saturated and steeping evenly.

Step Five
Stir The Crust
At about the one-minute mark, remove the lid and give the brew a gentle stir. You'll notice a "crust" of coffee grounds floating on top—just agitate enough to break it up and submerge the grounds back into the water.
You don't need to stir vigorously. A few gentle back-and-forth strokes with a spoon is all it takes. Replace the lid and let the coffee continue steeping until it's time to draw down.

Draw Down
Just after the 2.5-minute mark, place your Clever Dripper on top of your carafe or mug. The valve opens automatically and the coffee draws down through the paper filter in about 30–45 seconds. That's it—you're done.
