Tebe Taye is a unique decaf coffee from the folks at Swiss Water - experts at finely decaffeinating coffees to ensure their original character and flavor shines through. This coffee is composed of two lots from different processing stations: Tebe Haro Wato and Taye Gedo. Both stations receive heirloom cherry from surrounding small-holders, but interestingly one of the lots that make up Tebe Taye is washed and the other is natural. After decaffeination, the cup still carries some of the brighter fruity tones of a natural coffee paired with the cleaner, more refined profile of a fully washed coffee. It's a cool idea since most often the quality lacking in decafs is brightness - this is a way to help that shine through without committing fully to a wild natural-processed coffee.
Those brighter, fruity tones definitely come through - we're tasting berries and florals behind a thick, chocolatey base that makes a great, substantial brew. This is a decaf coffee that doesn't immediately betray its non-caffeinated status via flavor, which is impressive in its own right. But not only does it "not taste like decaf" - it tastes great! Which is what really counts in our book. Enjoy!
