As seriously as we take coffee it's always nice to have a bit of fun, which is part of why we love the name of this decaf so much. In Spanish, Desvelado means "sleepless" - but this lot should make it easier to enjoy a late cup without staying up all night! Sugarcane processing is common in Colombia thanks to the abundance of sugarcane, which allows the beans to be processed quickly after harvest and initial milling rather than being shipped in parchment to a separate facility for decaffeination. Many decafs are known to have a bit of a "flat" taste that comes from the process, but we think these stand-out Caturra, Colombia, and Tabi beans from farmers in Acevedo, Huila shine through with a rich flavor profile that can be enjoyed any time of day.
This cup definitely qualifies as "smooth" - a thick, almost creamy consistency is one of the enjoyable qualities we noted upon brewing, along with some sweet black cherry flavor and a good caramelized sugar sweetness. On the whole it's more mellow than some of the super-bright Colombian coffees we've featured from Huila - but a welcome change of pace and a coffee that's easy to enjoy brew after brew.

After searching far-and-wide to find an exceptional cup of decaf coffee, my search has finally come to an end. This. Is. It. Seriously, the difference between this decaf and others is night-and-day (bad decaf pun non-intended). Preparation: Quick (2m extraction) pour-over on a course grind at 202°F with a 16:1 ratio was flawless.

Sublime decaf. Surprisingly, I actually enjoyed this more than some of the regular, caffeinated Moustaches I receive. Do yourself a favor and get this coffee, even if you don't typically enjoy decaf. Brew a small pot in the afternoon and luxuriate in the lavish texture and taste. Great stuff.
