Colombian Coffee Guide
Small family farms, year-round harvests, and some of the most versatile specialty coffee in the world. Discover what makes Colombia a cornerstone of our sourcing.
The Big Picture
Why Colombian Coffee Stands Out
Colombian coffee is prized for its balance, sweetness, and clean flavor profile. Grown on small family farms across three Andean mountain ranges at altitudes of 1,200 to 2,200 meters, Colombian specialty coffee benefits from equatorial sunshine, rich volcanic soil, and abundant rainfall—producing fresh harvests year-round unlike any other origin.
What sets Colombia apart is the scale of its smallholder farming. The typical Colombian coffee farm is just 2–6 hectares, run by a single family who hand-picks, processes, and dries their coffee on-site. This hands-on approach—combined with Colombia's incredible geographic diversity—means you'll find remarkable variation from region to region, farm to farm.

Where It Grows
Key Coffee Regions
Huila
Located in southwestern Colombia, Huila is the country's most celebrated specialty coffee region. Its position between two Andean ranges creates diverse microclimates that allow year-round production with both a main crop and a secondary mitaca harvest.
- • Flavor profile: Bright acidity, stone fruit, caramel sweetness, juicy body
- • Notable: Home to many Cup of Excellence winners; two harvests per year
Tolima
West-central Colombia, Tolima is an emerging region gaining recognition for specialty quality. Historically overshadowed by Huila, Tolima's farmers are increasingly investing in quality-focused processing.
- • Flavor profile: Balanced sweetness, brown sugar, citrus, clean finish
- • Notable: Growing reputation for quality; excellent value for specialty grade
Nariño
On the border with Ecuador, Nariño is known for extreme altitudes—some farms sit above 2,000 meters. The intense UV radiation and cool temperatures produce dense beans with concentrated flavors.
- • Flavor profile: Intense acidity, tropical fruit, floral notes, complex sweetness
- • Notable: Among the highest-grown coffees in Colombia; small lots, exceptional quality
From Farm to Export
Production & Processing
Colombian coffee production is defined by its smallholder model. Each family farm handles the entire process: picking ripe cherries by hand (often multiple pickings per year as cherries ripen unevenly), pulping and fermenting them in small on-farm wet mills, washing the fermented parchment, and drying it on raised beds or concrete patios.
Once dried, the parchment coffee is delivered to a local cooperative or exporter, who handles dry milling, grading, and export. This vertically integrated farm-level processing gives each lot a distinct character tied to that specific family's methods and care.
Washed Processing (Majority)
- — Cherry pulped and fermented 12–36 hours
- — Washed clean, dried as parchment
- — Produces clean, bright, origin-forward cups
- — The standard Colombian method
Honey & Natural (Experimental)
- — Some mucilage left on during drying (honey) or whole cherry dried (natural)
- — Adds body, sweetness, and fruit complexity
- — Risky in humid Colombian climate—mold and defects more likely
- — Growing in popularity as farmers experiment
Always In Season
Fresh Colombian Coffee Year-Round
Unlike most origins where coffee is seasonal, Colombia's equatorial position and varied topography create overlapping harvest windows across its regions. This means fresh-crop Colombian coffee is available throughout the year—a rarity in specialty coffee.
