Located in southwestern Colombia, Huila is the country's most celebrated specialty coffee region. Its position between two Andean ranges creates diverse microclimates that allow year-round production with both a main crop and a secondary mitaca harvest.

From Farm to Export

Production & Processing

Colombian coffee production is defined by its smallholder model. Each family farm handles the entire process: picking ripe cherries by hand (often multiple pickings per year as cherries ripen unevenly), pulping and fermenting them in small on-farm wet mills, washing the fermented parchment, and drying it on raised beds or concrete patios.

Once dried, the parchment coffee is delivered to a local cooperative or exporter, who handles dry milling, grading, and export. This vertically integrated farm-level processing gives each lot a distinct character tied to that specific family's methods and care.
