Juicy Strawberry - Colombia, Huila/Tolima/Caldas
A wildly expressive co-fermented natural from El Vergel Estate, where ripe cherries sourced from farming families across Huila, Tolima, and Caldas are transformed through one of the most inventive processing methods coming out of Colombia today.
After hand-sorting and a multi-stage fermentation, the depulped beans are anaerobically co-fermented for five days with their mucilage, yeast, and real strawberry, amplifying the honey process into something truly vibrant. The result is a cup bursting with juicy strawberry and red fruit, grounded by milk chocolate and brown sugar, with a bright lift of lemon and malic acidity.
