Origin & History:
La Bohemia is a breathtaking farm nestled in the trail of Buenos Aires, near La Unión, Nariño, Colombia, at an altitude of 2,000 meters. Owned and operated by Raquel Lasso and her husband Carlos for nearly 30 years, the farm spans 6 hectares and is often blanketed in a gentle, mystical fog due to its elevation. Around 10,000 coffee trees grow here under about 20% natural shade, cultivated with care and precision.

Raquel and Carlos work in perfect synergy. Carlos oversees all processing, bringing an artisan’s touch to every batch and even tasting the "mosto"—the liquid generated during fermentation—to decide when the coffee is ready. Raquel leads all the farm’s innovation efforts, including a self-sustaining greenhouse project that provides both vegetables and a secondary income during the off-season. Their shared dedication and attention to detail create a truly special coffee.

Process:
This Borbón variety is crafted with an exacting process led by Carlos, who monitors each lot closely with his sensory skills. For this particular batch, the fermentation lasted 96 hours (4 days) while the coffee remained in its mucilage. Carlos ended the fermentation when the mosto “tasted like a good wine.”

The coffee is then gently washed using minimal water, as the fermentation naturally loosens the mucilage. After washing, it is sun-dried on raised beds located right next to Carlos’s home. The final step is a 25-day stabilization period in GrainPro bags, allowing the flavors to fully develop before milling.
