This Colombia Risaralda Decaf lot comes from Cooperativa de Risaralda, which was founded in 1959 and represents smallholder farmers throughout the department of Risaralda, Colombia. In addition to offering farmer training, milling, and export services to its members, the cooperative supports farmer families with a range of social services including subsidized education and healthcare. This process involves placing the coffee in a solution of water and ethyl acetate, a naturally occurring compound derived through the fermentation of sugar cane. The carbon footprint is kept to a minimum, with the solvent being derived from the domestic sugar cane industry, and the process occurs within Colombia. Any potential residual EA would evaporate during the roasting process so you aren’t consuming it. The process takes about 24 hours and removes about 98-99% of the caffeine. The extracted caffeine is sold to energy drink companies or soda companies. The silver skin from the green bean that was removed is also used and sold as a fertilizer...a darn good fertilizer, too!
