From the hillsides of Acevedo, Huila, this stunning microlot comes from María Belén Díaz and her family at Finca Resinas — a farm they built from the ground up through years of hard work and dedication. María brings a rare combination of lived-in farming knowledge and formal training as a coffee quality analyst, and she was among the first women in the region to earn a processing certification from The Forest Academy in 2024.
The process is meticulous: Pink Bourbon cherries are pre-fermented for 24 hours, then undergo a 36-hour anaerobic fermentation in bags before drying on raised beds for 15 days. The result is a vibrant, layered cup with notes of green apple and tangerine, lifted by delicate florals and green tea — bright, clean, and beautifully complex.
A coffee that reflects both the terroir of Huila and the ambition of a producer determined to make her mark on the specialty world.
