This is a very special lot of coffee from the fantastic El Injerto farm in Huehuetenango. Managed by the 3rd and 4th generations of the Aguirre family - En Injerto is a premiere coffee producer in Huehue known for spectacular coffees and exemplary business practices. They have a wet mill and drying patios on-site, and process all their own coffee to exacting standards. The farm is also focusing on sustainability, implementing new processes to collect and utilize the water and pulp from coffee processing to create a zero-waste cycle, and generating all their own electricity with solar and hydroelectric systems on-site.
This particular lot is what they're calling "Yellow Nance" - a varietal probably derived from Bourbon that is named for the cherries' visual resemblance to the Nance fruit. Since El Injerto has their own processing facilities - they can do more intensive processes like double-fermentation, producing washed coffees with very unique profiles. We're picking up on a fresh peach note with some cinnamon spice - a combination that's compelling whether it's your first cup or your fifth. Coffees like this are the definition of specialty coffee - the perfect combination of quality beans and expert processing - and we can't wait for you to give it a brew!

Well-rounded and medium-bodied. A bit of brightness, a piquancy, and a touch of sweetness overlain on a grounded backbone of roastiness. Absolutely delicious. Easy-drinking, yet the complexity is there for those who look.

It's a great, mellow cup of coffee. I can see this as an everyday coffee without getting bored. I'm picking up more peach/floral than cinnamon which for me is perfect. Nice work. Keep the hits coming.
