El Triunfo is a farm near the town of Garzon in Central Huila - and as the name implies, this coffee is a triumph! It's a mix of different varietals grown on the farm - mostly Castillo, Caturra, and Colombia, which are the typical varietals for the area. Also typical to Huila, this coffee was wet-processed and dried on raised beds under covers. In some parts of the world, covers allow producers to control the amount of shade their lots experience to influence drying time. In Huila, the covers are also about keeping the drying coffee out of the rain!
While this lot consists of common varietals, processed in a common way - the flavors are anything but! We're getting bright splashes of acidity and tartness from this brew, which reminds us of cranberries. That's not to say it isn't sweet. There's a good balance to the cup, along with a hint of spice that adds even more energy to this upbeat brew!
