This exquisite Ethiopian Heirloom coffee was grown in the Kochere region by small-holders in the community and brought together for processing at the Boji wet mill. This particular lot is shade dried, which involves erecting a large tent over the drying tables where the coffee beans are spread out after processing. Drying without direct exposure to the sun allows the coffee to reach a more consistent moisture content but requires investing in an expensive tent system and waiting up to 30 days for the coffee to fully dry. Mill owner Israel Degfa believes that all the extra effort brings the best flavors to the forefront, and reserves shade-drying for the highest-quality lots that arrive at the Boji washing station.
Boji Magarrisa is a delightful coffee with really delicate flavors, thanks at least in part to the shade drying process. A beautiful jasmine note leads the way with a subdued sweetness and out-of-this-world aroma. A juicy plum note adds some tartness and substance to the body of the cup, while a hint of orange sneaks in on the tail-end of the flavor profile to contribute acidity. Magarrisa is a very composed cup of coffee that will reward careful brewing and attention to detail. A ton of effort went into growing and processing these beans, taking some extra time to dial in your brew will really pay off with incredible flavors. I’m not being dramatic when I say this is one of the best coffees I’ve ever tried. Such a sweet smell when I opened the bag – plum for sure. I was nervous when I read that the flavors were “delicate” but there was very much a powerful flavor coming through. I’ll keep enjoying!

As with pretty much any coffee I'm making at home, there's a big part of me that wonders if I'm not doing something to get the proper flavor out. I brewed this at a 1:16 ratio in my Kalita wave pour over. Relatively small grind (I think it's a 14 on my Baraza Encore). Water close to 202 F, if that matters ;) The Boji Magarrisa was delightfully light and smooth, but some of the acidity threw me off a bit. Definitely a great coffee, but I'm still trying to discover what I like most and I'm keeping my mind (and the 5-star rating) open for true love. Prior to this I was drinking an Ethiopia from Stumptown which was very delicate and I want to say "neutral" but in a great way. So that's my reference point thinking about this coffee.

I am really blown away by the flavors in this coffee. At this point in my coffee career, this is the pinnacle bean from my most beloved country of Ethiopia. I feel that the shaded drying process must have had a deep impact on the final product. If you guys find more lots of this type and quality, please send them my way!

My palate is used to coffees with a more "Classic" profile but I liked this coffee as well. It's bright, fruity, and fairly acidic. It's not a 5-star coffee for me personally but I did enjoy my time with it.

Let me be clear: 3 stars for Moustache is like 5 stars every other coffee. I did really enjoy this. It's definitely lighter and more drinkable than other Ethiopians I've had, but I didn't quite like it as much as the last one I had, Bale Mountain.

This one is a standout... the jasmine takes a clear front seat here with a bit of citrus/acidity rounding out the profile. Can't wait for the next batch!

and if you did. WATCH for it. I was expecting, based on the notes described, a 'sweet' coffee. It is not. This coffee is so well balanced. 3 T in French Press/5 min. Do NOT miss this one. I have noticed we are preferring higher elevations. But, the specific drying process used in this magnificent coffee has me looking for more.....that follow this process and handled by this grower. I will ...BOLO!!
