Guatemala is not known for it's natural coffees so we are excited to bring you this dry processed coffee from the Ayarza region of Guatemala. The climate is a little more damp in Guatemala than the traditional "natural" regions - heres looking at you Ethiopia - so the process used is a little different. The coffee is first dried on patios for 5-6 days and then once it has reached a target humidity it is finished in guardiolas (big heated driers) - for all you soccer fans I think it's funny that Pep's name is basically "Joseph Dryer" much less impressive sounding.
But back to the coffee - This process produces a unique and different flavor than the natural coffees of Ethiopia - let us know what you think!
